Yam Burgers with Chipotle Mayo

- Yams - 2
- White Cannellini Beans - 1 can (~2 cups)
- Peanut Butter - 3 Tbsp
- Maple Syrup - 2 Tbsp
- Flour - 1/4 cup
- Cumin - 1 Tbsp
- Paprika - 1 tsp
- Mustard (ground) - 1 tsp
- Panko for coating - ~1 cup
Chipotle Mayo
- Mayo - 1 cup
- Lime - 1
- Chipotle Peppers in Adobe Sauce - 2 to 4

- Avocado
- Onion
- Tomatoes
Directions

Preheat oven to 350°. Cut yams into 1/2" cubes. Coat with oil, salt and pepper. Bake for ~20 minutes, flipping once.
Prepare chipotle mayo. Chop up 2-4 chipotle peppers depending on your heat preference. Add to mayo, with 1-4 tsp of the adobe sauce. Add lime juice. Mix and refrigerate.
Combine cooked yam, white cannellini beans, spices, flour, peanut butter, and maple syrup. Season with S&P. Mash with a masher, spoon or fork.
Sprinkle surface with panko, grab a small ball of burger mash and place on panko. Flatten then sprinkle with more panko. Coat evenly and place on baking tray. Repeat for ~8 patties, then refrigerate for 30 minutes.
Heat oil on med-high heat in pan. Cook burger for 5 minutes on each side.
Fix up your burger and enjoy!
