Vegetable Stir Fry with Tangy Yogurt Sauce


Surprisingly easier to make than expected. Although it's an extra step, the sweetness and tangy-ness from the yogurt sauce with the mild spiciness of the stir fry is delicious.


Ingredients

Servings: 4

Stir Fry
  • Mushrooms - ~4
  • Baby Bok Choy - 4
  • Red Bell Pepper - 1
  • Red Onion - 1/2
  • Garlic - 2 cloves

Coconut Rice
  • Rice - 1 + 2/3 cup
  • Water - 1 cup
  • Coconut Milk - 1 can
  • Garlic - 3 cloves

Stir-fry Sauce
  • Soy sauce - 1/3 cup
  • Peanut Butter - 3 Tbsp
  • Rice vinegar - 3 tsp
  • Honey - 1 Tbsp
  • Chili paste - 2 tsp
  • Garlic - 1 clove

Tangy Yogurt Sauce
  • Yogurt - 1/3 cup
  • Garlic - 1 clove
  • Ginger - 1/2" piece
  • Lime - 1/2 squeezed + rind

Directions

Chop up one garlic clove, and mix with soy sauce, honey, rice vinegar, peanut butter and chili paste. Blend or mix well and refrigerate.

Chop up one garlic clove, and mix with grated ginger, lime rind, lime juice and yogurt. Mix well and refrigerate.

Combine rice, water, coconut milk and garlic and bring to a boil. Reduce to low-med heat and cook for 30 minutes.

Heat oil in wok. Cook garlic and red onion for 1 minute. Add mushrooms and cook for 3 minutes. Add red bell pepper and cook for 1 minute. Add stir fry sauce and cook 3 minutes. Stir in bok choy and cook for 1 minute.

Plate dish and drizzle with yogurt sauce. Garnish with green onion and sesame seed and enjoy! 


Step-by-step Directions

Chop up one garlic clove.

Combine with soy sauce, honey, peanut butter, rice vinegar, and chili paste.
Blend or mix well.
Chop up one garlic clove and grate ginger and lime.
Combine above with yogurt and 1/2 lime squeezed.
Combine rice ingredients and bring to boil. Reduce to low-med heat and cook for 20 minutes.
Chop up garlic, mushrooms, red bell pepper and red onion.
Heat oil on high.
Cook garlic and red onion for 1 minute.
 Add mushrooms and cook for 3 minutes.
 Add red bell pepper and cook for 1 minute.
 Add stir fry sauce and cook for 3 minutes.
 Tear apart bok choy.
 Add bok choy and cook for 1 minute.
Stir fry ready
 Rice ready
 Chop up one green onion
 Garnishes
Plate and drizzle with yogurt sauce. Top with green onion and sesame seeds.
